Shepherd's Pie


Recipe video above. Shepherd’s Pie is one of those foods that brings a smile to everyone’s face – especially when you get seconds! While it's traditionally made with lamb, this is equally delicious made with beef (and makes it a Cottage Pie!) Terrific make ahead! GF option in Note 4.

Ingredients

750 g Ground lamb
Produce
2 1/2 peeled and cut into cm 1.2 kg / 2.2 lb potatoes
2 Bay leaves, dried
1 Carrot
1 Celery, rib
2 Garlic cloves
1 Onion
1 cup Peas, frozen
1 Thyme, Fresh leaves
3/4 tsp Thyme and rosemary, dried
Canned Goods
1 Beef bouillon cube
2 cups Beef stock / broth
1/4 cup Tomato paste
Condiments
1 tbsp Worcestershire sauce
Baking & Spices
1/4 cup Flour
1 Salt and pepper
Oils & Vinegars
1 1/2 tbsp Olive oil
Dairy
4 tbsp Butter
2/3 cup Milk, whole or low fat
2 tbsp Parmesan, grated
Beer, Wine & Liquor
1/2 cup Red wine

INGREDIENTS: Crust: 1 1/4 c. graham cracker crumbs 6 T. unsalted butter, melted 1/4 tsp. ground cinnamon Cream Cheese Mixture: 1 (8 oz.) package cream cheese, softened 1/2 c. confectioners' sugar 2 c. whipping cream 1/2 tsp. vanilla extract 3 T. granulated sugar Blueberry Filling: 1 (21 oz.) can blueberry pie filling= INSTRUCTIONS: Prepare the Crust: In a bowl, combine graham cracker crumbs , cinnamon, and melted butter. Blend with a fork until crumbs are moistened. Set aside 2 tablespoons of crumbs to sprinkle on the top.
